Chewy Chocolate Chip Bites

Finding a snack that can satiate your little cravings can feel like a mission. Whether you’re on the hunt for something sweet or need a little mid-day pick-me-upper. This chewy chocolate chip bites are a really great option!

So as far as snacks go, yes, having something that comes right out of nature – a fruit or veggie – will always be THE best option. Simply because we will never be able to beat the nutrition perfection that happens in nature. I also get that sometimes we’re in the mood for something else.

These chewy chocolate chip bites are made with simple ingredients. Mainly dates, carob or cacao powder, and walnuts. As for the cinnamon, coconut oil, and chocolate chips, they are added for a little extra flavor and/or nutrition.

Like always, I encourage you to add, remove, tweak and just play around with the ingredients. If you are a chocolate lover, add more cacao or carob. Want to keep it vegan? Make sure your chocolate chips are vegan. And if you’re gluten-free, well this recipe is already gluten-free.

Add these delicious little bites to your meal prepping so you can have a great snack on-the-go for the week. It will take less than 20 minutes to make and you’ll be giving your body a daily energy (and nutrient) boost. See you in the kitchen!

Chewy Chocolate Chip Bites Recipe

Yields 8-10 bites


  • 1 cup pitted Medjool Dates
  • 1/2 cup walnuts
  • 1 TBSP coconut oil
  • 1/4 cup carob powder or cacao powder
  • 1/2 tsp cinnamon powder
  • 1/4 cup dark chocolate chips


  1. Preheat oven to 350 degrees F.
  2. Add all ingredients (except the chocolate chips) in a food processor. Pulse until it forms a dough.
  3. Make cookie shapes with your clean hands and top with chocolate chips.
  4. Place “cookies” or bites in a baking tray and bake for about 10 minutes.
  5. Enjoy warm or store in airtight container and keep in fridge for up to a week.

My grandmother is in town visiting and ended up getting a very bad cold. It actually seems that many are feeling a little under the weather. Which is why I wanted to share with you some natural ways to say goodbye to the sniffles that you may have been struggling with. 

First thing is first, for those of you that don’t know me, I am not a fan taking medication. You see, I was an epileptic during my teenage years and two things came from that. One, since I was on meds for 12 years of my life, I avoided any other medication because I was just sick of having to take pills. Two, my meds actually made me very sleepy which is why I can barely make it after 10 PM without craving my comfy PJs till this day! But to my first point, I was never a fan of taking any sort of medicine for anything else. And that includes cramps, migraines/headaches, and of course your good ol’ cold and flu.

How Understanding Inflammation Changed My Life (and Skin)!

Inflammation. We are always talking about it and it seems that everyone is experiencing some form of inflammation. Although I am tempted to start talking about what inflammation is and how to control it, I first wanted to share why this topic is so close and dear to my heart.

I, like many, suffer from chronic inflammation. It manifests itself on my face, scalp, and joints. The joint part is the most painful one, but the face and scalp are what bothers me most. For about 10 years now, I get random episodes of dermatitis. For those that are not too familiar with dermatitis, it’s simply an inflammation of the skin. For me, it shows up on my forehead, sides of my nose, and on my scalp. It sucks because when I am having a flareup, I feel like that’s what everyone can see. My skin gets a little rough, red, and sometimes peels. Not fun at all! Can anyone relate?
